Delicious porcini

In some part of Italy, you know it is fall when you start craving for porcini mushrooms. They are specific to some kind of forest and when it is season you will see them in groceries, in boxes along rural roads and in restaurant menus. I miss them so much!!! Unfortunately, I’ve never seen them on sale in North America. When it’s mushroom season in Piedmont and Liguria the hunt starts. For some it’s a hobby, for others it’s a side job. They can be sold at a high price and this is why the hunter never brings you in the wood in order to keep secret the precious spot. You can find different kind of mushrooms and they are all very tasty. However, in my opinion, il porcino is the king. During the gorgeous fall weekends, you can go for a walk in nature or in a picturesque village and have lunch in a trattoria. Fried porcini is my favorite but also polenta or pasta with mushrooms sauce. Whatever you make with them, they are delicious!
